365

 The day started out with silly big sister- little brother breakfast talks over a cup of joe on my part and honey bunches of oats on his. Then came the coffee run for a crème brulee latte and ended up being greeted with the disappointing news that they are no longer giving out that sweet savory latte. BUT  fear not, I got the second best drink soy caramel machiatto EXTRA caramel. Yumm.
  
Now I’m home, been here in the couch for a few hours with my second…or is it third cup of coffee?
 
I’m thinking I should do some exercise, but then again it’s just way to comfy under the sheets. Yeah, it’s that kind of day. Everyone in the house has been hit with the lazy virus…or maybe it’s just me.

Any-ways…

A few days ago I read this post from A Beautiful Mess, and was very intrigued. Back in elementary school, for one of my birthday presents I got the cutest diary. It was pastel pink, with a heart picture frame in front. I loved it. I wrote about the silliest things, when my best friend came over, when we got into the dumbest fights. I would say about 80% of the things I wrote about were boys, oh yes boys. When I encounted the cute guy in my gym class, when ‘mr. hottie’ talked to me and how I shyed away. I could embarrass myself even further but I’ll stop there for today. Point being, ten-twelve years later I still sit down and read my diaries for years and sometimes months ago. When I read about the 365 challenge in Elises blog i thought, I could actually do this.  A picture a day seems pretty easy…but for a year yikes! It can be intimidating. But imagine the memories captured by a simple snapshot you will have for years to come. Sooo… (drum roll please) I will be taking the 365 challenge and I couldn’t be more excited. I’ll be posting weekly/daily updates here. I feel like putting it here will make me actually go through with it and (I don’t want to jinx myself) finish it.  I guess it goes with all goals, it’s better to share your goals with others rather than keeping them to yourself.

Cream of Tartar





Ive made snickerdoodles three times, always without cream of tartar. I know what youre thinking What?! this woman is crazy. I know, I know. In all honesty, I didnt see what all the commotion was. Plus it only called for cream of tartar in snickerdoodles which I barely make, so I didnt see the point in buying some. 

It wasnt until yesterday that I got myself to buy some cream of tartar.
And so today I decided to whip up some snickerdoodles, I was in that snickerdoodle kinda mood. You seriously can taste the difference, having made some with and without itcream of tartar makes it better. Lesson Learned; use cream of tartar!

Oatmeal Cookies





I love these oatmeal cookies, they aren’t your traditional oatmeal cookies these have coconut flakes and cereal…yes cereal! No worries it tastes delish. I always make these during the holidays and they're a hit!

I got this recipe from a Kraft food magazine about three years ago and have been using it since. I would definitely call it my go-to cookie recipe.

Oatmeal cookies
(adapted from Kraft: comida y familia magazine)  

Yields four dozen

1 ¼  c. flour
1 tsp Baking powder
1 tsp Baking Soda
½ c. oatmeal
½ c. butter
¾ c. brown sugar
½ c. white sugar
1 egg
1 tsp vanilla extract
1 c. Corn Flakes or Honey bunches of Oats
1 ¼ c. coconut flakes
½ c. rasins

1.       In a small bowl mix in flour, baking powder, baking soda and oatmeal. Set aside
2.       In a large bowl mix butter and brown and white sugar until fluffy
3.       Add in the egg and vanilla extract into butter mixture.
4.       Add in the dry ingredients into the butter mixture
5.       Add in coconut, rasins and cereal
Bake at  350 for 15-20 minutes or until golden brown.

Monday+Finals



IT’s finals week!
 

I couldn’t be any more thrilled, finals week means:

 a) I get one sweet month off school 

b) my grandparents come into town this weekend

I’m crunching in last minute studying for Wednesday, tomorrow I have a break before the big dreadful lets-get-this-over-with accounting final. Accounting for me is that class i absolutely dread, it's just not my cup of tea. (I'm a marketing major, and accounting is a required course) Funny thing is that in the weekends I do my dad’s paperwork for his business, which incorporates some accounting.

So....
 
I won’t be posting much this week, so I leave you lovelies with this adorable little bunny. I found him on pintrest here and I just had to share him with you.
